Gnocchi (Italian Dumplings)
Classified as pasta but really they are Italian dumplings and they are what I like to call “little pillows of heaven”. Hard to control yourself when eating these yummy gems - you know you probably shouldn’t eat all of them but you do anyway. They really are that delicious! These can be simply boiled and then tossed in some garlic & olive oil, a little butter & salt, a fresh red sauce or go right from the boiling pot to a sauté pan glistening with brown butter and sage and give them a little crisp. They are a simple pasta from humble beginnings yet each bite will transform you to Tuscany enjoying them with a glass of good wine.
